Recipes: Mothers’ Day brunch

Sometimes, veganism is like pedaling too fast on a bicycle.

It feels really great to peddle fast and, then, you realize you’ve left everyone behind.

The good:

Pineapple muffins:

  • 1 pineapple, cored and chopped
  • 2 cups whole wheat flour
  • tea baking soda
  • 1/2 tea baking powder
  • zest of one lemon
  • tea vanilla extract
  • 1/3 cup turbinado sugar
  • 1/2 cup agave nectar
  • 350, 17 minutes

Apple biscuits

  • 2 cups flour
  • 1 apple, cored, chopped in the food processor
  • 2 TBS baking powder
  • *pinch rosemary
  • pinch salt
  • Mix and drop onto parchment paper covered cookie sheet.
  • 400, 12 minutes

Fancy Holiday “Quiche”

  • 1 package extra firm tofu
  • tea onion powder
  • tea garlic powder
  • 1/2 tea tumeric
  • 1/4 cup nutritional yeast
  • 1/4 cup cornstarch
  • 1.5 tea Dijon mustard
  • juice of one lemon
  • assorted vegetables
  • 350, 40 minutes

To be fair, I enjoyed everything. But, the general consensus of those in attendance was:

  • quiche: one bite
  • muffins: half eaten
  • biscuits: given to the compost pile
  • fruit: even my twelve year-old brother ate the fruit, because he thought the rest was a disaster

Sometimes, you win. Sometimes, you break even. Sometimes, you’re the only one still eating while everyone else gets more fruit. I’d still call that a win-win : )
