Recipe: strawberry oat-y breakfast-y bars

I wanted to make something special for breakfast, as it’s my two year anniversary tomorrow : )

As we are both sleepy morning people, I thought a breakfast bar would work, both to maximize time in bed hitting snooze and as a special treat for Adam.

I adapted this from Oh, She Glows, one of my favorite blogs.

  • 1.5 cups oats
  • 2 cups flour
  • 1/2 tea baking soda
  • 1/2 salt
  • 1/4 cup sugar
  • 1 chia egg (TBS chia seed mixed with 4 TBS warm water)
  • 1/4 cup maple syrup
  • 1/3 – 1/2 cup almond milk
  • TBS toasted sesame seeds
  • 2 1/2 cups strawberries, hulled
  • 2 TBS agave nectar
  • TBS chia seeds

Heat strawberries in a pan with agave nectar until boiling. Reduce heat and add chia seeds. Bring to boil and maintain for 10 minutes, stirring constantly.

Sesame seeds!

Toast sesame seeds.

Combine dry ingredients, beginning with the chia egg. Combine wet ingredients. Combine.

Parchment paper on baking sheet and spray.

Press mixture onto sheet and smooth.

Sprinkle with sesame seeds.

Turn grill on lowest setting.

30-40 minutes, watching the crust.
