I somehow misplaced the recipe I used to make a sweet treat for a dear friend’s catered Happy Hour. As she has several vegan and a few gluten-free co-workers, she needed some friendly offerings.
So, I made these custardy, blueberry basil bites!
Then, I lost the recipe!
I do remember vegan chocolate double boiler style, a coconut flour, flax egged batter, rolled into a ball and placed in a muffin tin, with a blueberry, topped by a piece of torn basil and hardened chocolate and splash of coconut milk for a creamier texture…
This was the night of my two failed muffin batches. To say I was beginning to panic may be an understatement…
