Recipe: Breakfast of champions

My breakfast of champions looks suspiciously of eggs!

It was a wonderful way to appease my cold body that got up and went for a chilly jog this morning.

Turmeric Tofu Scramble

  • 1/2 red bell pepper
  • 1/2 yellow pepper
  • 4 broccoli florets, broken into small pieces
  • 3 mushroom caps, sliced
  • 1 green onion, chopped

Any vegetables will do, though!

  • 1/4 of a block of tofu, crumbled
  • lots of black pepper
  • large dash of hot sauce
  • a tiny touch of salt
  • 1 1/2 tea turmeric

Steam the vegetables in a layer of heated water in a large-ish pan with black pepper and hot sauce, 4-5 minutes.

When the veggies start to look like they are changing color, crumble in the tofu and turmeric.

It becomes a big, hearty and warming breakfast!
