I never thought I would type “bbq” and mean it.
But, this is really important.
This tasted buttery, peppery, wonderfully and topped with a pickle! It was so good, I ate it again for dinner! : )
Quick tempeh bbq sandwiches:
- 1 package of soy tempeh (found in the weirdo section of Kroger), lazily diced
- 1 cup of your favorite barbecue sauce, homemade or otherwise
- 1 small-medium Vidalia onion
- lightly toasted wheat bun
- dill pickle slices
- Veganaise schmear, for final preparation
Preheat the oven to 400 degrees.
Dice the onion and place half in the bottom of a baking dish.
In the food processor, combine remaining onion, tempeh and barbecue sauce (and hot sauce; always hot sauce).
Pulse until combined and tempeh is in small, uniform pieces, but without becoming a sauce.
(Start slowly. I imagine four-seven pulses will do it.)
Add mixture to onions in baking dish and bake for 20 minutes.
It’s done when the red of the barbecue sauce becomes burgundy.
Mix and top onto lightly toasted wheat bun, with pickles and mayo.
Seriously. If you do nothing else this decade, try this recipe. It takes seconds to prepare, smells deliciously, the tempeh texture becomes just right in the food processor with barbecue sauce and generally made my year. Plus pickles for extra credit.
