Holiday panic attack: No thanks!

What to do when you are planning which of your nine families’ holiday gatherings to attend?

Muffins!

Corn muffins to accompany Overnight Black Bean Soup VERSUS Berry Berry Cocktail Muffins I mangled to match my on-hand ingredients.

Corn muffins (Adapted from the Post Punk Kitchen’s recipe here):

  • 1 cup almond milk
  • 2 tea apple cider vinegar
  • TBS almond oil
  • 1 cup whole wheat flour
  • 1 cup corn meal
  • TBS turbinado sugar
  • 2 tea baking powder
  • 1/2 tea baking soda
  • 1/2 tea salt
  • 1/2 overly ripened banana, mashed
  • 1/3 cup unsweetened applesauce
  • 1 cup corn (thawed if frozen)

Mix dry ingredients.

Make a well in the center.

Mix wet ingredients separately.

Combine, taking care to not “over-mix.”

Fold in corn lastly.

Bake at 350, 18-22 minutes.

Black bean overnight soup looked something like the remnants of my vegetable drawer, but was yummy:

dried black beans, zucchini, purple cabbage, onion, carrot… (lazy yawn) … more garlic? hot sauce.

Berry, berry cocktail muffins:

  • 1 cup whole wheat flour
  • TBS turbinado sugar
  • 2 tea baking powder
  • 1/2 tea baking soda
  • 1/2 tea salt
  • zest of one lime
  • 1/2 overly ripened banana, mashed
  • 1/3 cup unsweetened applesauce
  • 1 cup homemade cranberry juice
  • 1 1/2 cups almost overly ripened strawberries

Enjoy before the merry-making breaks out!

The point is to enjoy this unaccounted for time off we are somehow gifted by murderers, slaughtered peoples, Christians, new wall calendars, casseroles, office parties, cookies, songs, old cocktail recipes, sleeping in your childhood bed and sneaking a drink before Santa comes.

And remember what to be very much, ultimately thankful to have: Adam, Penny, SkyMiles, new trips, Gordon-Gilbert and the chance to live to fight another day.
