Today, I made brown rice. This became brown rice burgers, rice cakes, rice with veggies. . . Still, more rice left. . .
I make a lot of rice at a time because I find it rather painful. Standing, stirring, stirring, adding, stirring, worrying “Is it sticking?!?!?!”
Like dough. I don’t like making dough, so when I do, I make five batches. Covered in flour, with my kitchen a mess, I am victorious.
Standing and stirring and worrying, I have leftover rice.
And coconut milk. And dried fruit.
- 3/4 cup (leftover) brown rice
- most of a can of coconut milk
- handful dried cranberries
- handful raisins
- dash of cinnamon
- last minute idea of roasted walnut handful
Heat all ingredients in a pan until warmed and sprinkle with cinnamon.
It smelled like Christmas morning : ) Methinks I have a plan for make-ahead breakfast while opening presents.
