Recipe: Veggie Philly on Homemade Wheat Bread

Tonight, I made the “I’ve just returned from vacation and have almost no food” meal. It was amazing : )

I wanted my house to smell less vacant (Why does your house smell differently after a couple days away?), so I finally got around to trying a whole wheat version of the homemade sandwich bread recipe I found earlier today on Domestic Fits.

Veggie Philly:

  • Roasted veggies (I had a small zucchini, a handful of mushrooms and a bell pepper still amongst the living.)
  • Homemade wheat bread (recipe below)
  • Dijon mustard schmear
  • Mushroom dipping sauce (recipe below)

I enjoyed this with a green salad and a big glass of soda water, something I’ve just recently begun to enjoy.

Homemade Whole Wheat Sandwich Bread:

  • 3 cups whole wheat flour
  • 2 1/4 tea yeast
  • 1/2 cup room temp non-dairy milk
  • 1/2 cup warm water
  • 1/4 TBS coconut oil, dissolved
  • salt and pepper
  • 1/2 TBS agave

Mix yeast with warm water and let froth, about five minutes.
Add milk.
Mix dry ingredients and make a well in the center.
Add wet ingredients and mix with a wooden spoon.
When combined, coat with melted coconut oil and knead for eight minutes.
Let rest in a lightly oiled bowl for one hour.
Knead lightly, releasing air from dough, and roll into desired shape.
Bake in a bread pan at 350 degrees for 35 minutes.

I rolled mine out and then rolled into a big cylinder shape, but wasn’t thrilled with the effect.

I’m going to try my own directions next time : )

Mushroom Sauce:

  • 6 mushrooms, diced
  • 1 cup water
  • 1/4 cup nutritional yeast
  • tea yellow mustard
  • TBS tamari
  • 1 garlic clove (I used a garlic clove that was already roasted and found the milder flavor to be more appetizing.)
  • TBS cornstarch
  • 2 TBS tahini
  • 2 TBS balsamic vinegar
  • 1/2 TBS agave
  • 1 TBS maple syrup
  • tea red pepper flakes

Heat all until bubbling except corn starch. When bubbling, add corn starch and whisk until incorporated.

Yum!!
