Recipe: Carrot Corn Chowder

Adam told me about a carrot soup he tried today, in our local deli. I couldn’t help but feel challenged.

Carrot Corn Chowder:

  • 3 carrots, peeled and mildly diced
  • 1 sweet potato, diced
  • 1 Vidalia onion, diced
  • 4 garlic cloves, diced
  • 1 cup water
  • 1 cup unsweetened non-dairy milk
  • 2 cups fresh corn
  • TBS crushed red pepper
  • salt and pepper

Boom.

And I made my favorite savory muffins, for good measure.
