Recipe: Vegan Hollandaise

Looking for some extra punch to your vegetables?

I love vegetables and eat them every day, but sometimes feel I’m in a self-imposed farmers’ market / dinner idea rut.

Spinach. Asparagus. Broccoli. Zucchini. Mushrooms… The same combinations, spices…

And then I remembered that a great sauce can change everything! Who doesn’t love a yummy dipping sauce or pretty sauce splash?

So, I present Vegan Hollandaise! I added a dollop to the huge asparagus I picked up yesterday and it was delicious!

Try with any vegetables, though! The pretty sauce splash is the limit!

Vegan Hollandaise:

  • 1 medium Vidalia onion
  • 1 clove minced garlic
  • TBS dijon mustard
  • 1/2 cup of cashew cream (or until you get the consistency you like)

Slowly sauté the onion over very low heat to achieve the sweetest possible caramelization, 20 -30 minutes.

Add dijon and garlic with five minutes of cooking time remaining.

Process in food processor, running a stream of cashew cream while running.
