There are so many delicious ways to substitute butter, cream and cheese! This is the meal I want to share with anyone who has ever looked so sadly at me, when I tell them I am vegan. And I am also a glutton. : )
Pasta with Cream Sauce:
- 1 cup white miso
- 1/2 cup stock
- 1/2 cup unsweetened unflavored non-dairy milk
- 1/2 cup nutritional yeast
- 4 grated garlic cloves
- 2 cups chopped mushrooms (or whatever vegetables you have around)
- any pasta you like
- topped with dried basil – I buy it fresh and use it both fresh and continue as it begins to dry.
Melt the miso over low heat in stock.
Grate the garlic into melting mixture and add milk and yeast.
This mixture will melt and become a cheesy, yummy delicious sauce that can be used on anything: pasta, vegetables, rice… Nachos!
