Recipe: Working From Home Hot Lunch!

I had the pleasure of working from home today, which means I am wearing socks during conference calls and I can make myself lunch!

I don’t microwave, so I have to be creative in the office, with making things that don’t need to be heated.

I have smoothies, apples and peanut butter, nuts and fruit, yogurt, sandwiches and salads. I eat well 🙂

But, it’s reeaaaallllyyy nice to eat something warm on a cold day in February!


Today, I enjoyed a lentil chickpea bowl with green garlic dressing (followed by a hot coffee and spoonful of peanut butter for dessert!)

Hot Lunch:
1/3 cup red lentils
Handful of mushrooms, sliced
1/2 can chickpeas
Juice of 1 lemon
Hot sauce — as much as you like!
2 garlic cloves
Salt and pepper

Cook the lentils, covered, with garlic clove in 2/3 cups of water, until water is incorporated and lentils are puffed.

Sauté the mushroom in a bit of water and with garlic and black pepper until browned. Add more water when mushrooms begin to stick.

Roast the chickpeas in lemon juice.

Combine ingredients and top with hot sauce and Green Garlic Dressing!

Green Garlic Dressing:
2 scallions, chopped
2 TBS lemon juice
Zest of 1 lemon
1/3 cup of water
2 TBS ripened avocado
Salt and pepper

Blend, scraping the sides until you have a very smooth consistency.
