Recipe: Vegan Girl Scout Cookie Jail Break!

I made vegan Samoa cookies tonight.

That is all.

Meat-eater husband tested and approved : )

Shortbread cookie:

½ cup coconut oil

¼ cup agave or pureed dates

½ tea almond extract

TBS non-dairy milk

1 cup whole wheat flour

⅛ tea baking powder

⅛ tea salt

Beat oil, agave, vanilla and soy milk until creamy.

Mix flour, baking powder and salt until well combined.

Make a well in dry ingredients and pour in wet.

Mix with a wooden spoon until incorporated.

Knead into a ball and refrigerate for 20 minutes.

Roll out and cut into whatever shape you like. I made mine into very thin rectangles, to be a little lighter.

Bake at 350 degrees for 10-12 minutes.

Drizzle with melted chocolate and top with coconut flakes.

Chill and devour.
