Recipe: Delicious Homemade Tortillas + Vegan Nacho Cheese

When I say I am not a great baker, I mean it.

Any time a recipe calls for an eighth of a teaspoon of warm (not hot) this and kneaded for 12 and a half minutes that, I know this is not the dish for me.

I can barely make pizza dough, and it is messy when I do.

When I saw a recipe for homemade spelt tortillas, I scrolled on past, but, got curious and went back.

This was a five ingredient recipe. And I don’t count olive oil for pan searing or salt as ingredients, so three.

Hmmmmmmm.

Can I be trusted? But look at how delicious looking they are on Oh, She Glows — an awesome blog to love!

I decided to give it a try!

I don’t keep spelt flour on hand, so I decided to try with my usual wheat variety.

I used:

  • 2 cups whole wheat flour
  • smattering of salt
  • 1/2 tea baking powder
  • 3/4 cup boiling water
  • enough coconut oil to coat the pan for each tortilla

DELICIOUS! And so easy!

To make, combine the flour and salt while the water boils.

Add boiling water and combine with a wooden spoon.

I used an ice cream scoop to form small balls that I rolled out to a small tortilla shape, but choose the thickness you like.

I heated the coconut oil until it melted, then I turned it to a medium-high heat, before heating each tortilla to the crispness you like on either side.

Keep each tortilla warm on a plate, covered by a cotton towel, while you heat the remaining tortillas.

Sooooo easy!

I ate mine with slow cooked (from the day before) black beans, roasted corn and sautéed garlic, onion and mushrooms + raw bell pepper, cilantro, tomatoes and vegan nacho cheese.

Vegan Nacho Cheese 

  • 2 TBS tomato paste
  • pinch of granulated garlic
  • pinch of granulated onion
  • 1/2 cup nutritional yeast
  • dollop of vegan sour cream
  • touch of hot sauce
  • enough water for the cheesy consistency you like

I’m so pleased I found something I couldn’t screw up by ignoring the instructions!
