I am not much of a sweets/breakfast/brunch person, so this breakfast very much appealed to all my sensibilities.
Spinach salad with edamame, garden cucumbers, bell pepper, cumin roasted corn and cilantro with lime sauce.
- juice and zest of two limes
- roasted jalapeno
- handful of cilantro
- salt and pepper
Roast a jalapeño on the grill or in the oven until successfully charred and limp. De-seed.
Blend with lime, cilantro and spices and enjoy!
