Delicious. I think the thing I like most about working from home is a warm lunch.
I was craving barbecue sauce today, so I decided to make tempeh.
Then, I realized I don’t know much about tempeh save that I like it, so I spent some time reading.
Turns out, tempeh is good for me. : )
The internet is a wonderful place. I often get this weird flashback when I’m goggling some inane detail, remembering the dreaded card catalogue… Happy Technology. 🙂
1/2 Vidalia onion, diced
1/2 – 1 cup your favorite bbq sauce
1/2 block tempeh, crumbled
3 handfuls of clean kale
chopped dill pickles
Saute the onion until translucent, adding a small amount of water to avoid sticking.
Add crumbled tempeh and stir.
Douse with bbq sauce.
Add pepper and kale.
Stir and heat through.
I intended on eating a wrap so I lined a tortilla with sauce, but the mixture was too big to roll up, so I ate it with a fork.
