Recipe: Eggplant Marinara Sandwich

This is her recipe for Italian bean meatballs. 

I made very little changes and had a lovely dinner of roasted eggplant meatball sandwiches with marinara and zucchini medallions.

For the whole thing, you’ll need:

  • 1 medium eggplant
  • smattering of Italian seasoning
  • smattering of red pepper flakes
  • salt and pepper
  • cooking spray
  • 1 zucchini, cut into rounds
  • 2 cups marinara
  • 1 1/2 cups kidney beans
  • 3/4 cup walnuts
  • 3/4 cups rolled oats
  • 1 cup shredded carrot
  • 1 whole head of garlic
  • jar of sundered tomatoes
  • 1 can diced tomatoes
  • 2 TBS ground flax seed
  • 3 TBS cold water
  • snipped ends of a strand of green onion
  • 1/4 cup fresh basil
  • salt and pepper
  • 1 cup soaked cashews
  • 2 TBS tomato paste
  • 1/2 cup nutritional yeast

Pre-heat the oven to 450 degrees.

Cut the eggplant longwise and sprinkle with salt in a colander for 30 minutes.

Make the bean meatballs:

Blend walnuts, oats, carrot, 3 sundried tomatoes, 3 garlic cloves, beans, flax seed + water until mixed, but not pureed.

Add chopped basil, red pepper, salt and pepper and roll into balls.

Make the cashew cheese in the food processor:

Blend soaked cashews, tomato paste and nutritional yeast with salt and pepper + 4 garlic cloves until smooth.

Rinse the eggplant, pat dry and place on cookie sheet with sliced zucchini rounds.

Spray with cooking spray and sprinkle with Italian seasoning, salt and pepper.

Bake until sufficiently charred, at least 30 minutes, with the meatballs.

Serve with cashew cheese spread on eggplant slices, topped with cashew cheese, marinara and meatballs.

Something green is good for the aesthetic. Enjoy!
