Old Standby Recipes: Poignant Quinoa

i love this recipe because so many transformations take place.

Quinoa is magical because it begins as a tiny speck, the size of a sesame seed, and when you put it into a big pot, with shaved garlic and vegetable broth, each little speck balloons and bursts and becomes something different.

Further, when all those specks burst when they’re hot, and you pop the lid and pour in some just-made vinaigrette, another magical thing happens, because they mix so well, it was like they were never apart.

Last, the magic of vinaigrette never eludes me.

Equal parts:


This particular one was:

  • 5 grated garlic cloves
  • 1 snipped green onion
  • TBS apple cider vinegar
  • juice and zest of 2 lemons and 1 lime
  • salt and pepper
