Homemade almond butter

I normally find almond butter to be quite sweet and it somehow never occurred to me that I could make my own. (How does that still happen to me after all this time?)

I adapted this recipe from Oh, She Glows, after looking for some inspiration.

Here’s mine:

  • 2.5 cups raw almonds
  • 2 TBS hemp hearts
  • 2 TBS chia seeds
  • 1 TBS maple syrup + 2 TBS warm water
  • tiny pinch of salt
  • TBS cinnamon
  • TBS almond extract

   
 Drizzle almonds, hemp hearts and chia seeds with maple syrup mixture and sprinkle with salt and cinnamon. (I envision upping the amount of cinnamon in the fall.)

Roast at 300 degrees for 30 minutes. Your house will smell wonderfully. 🙂

Put all in the food processor (which I chose over my fancy blender because the Ninja sounds like an aircraft carrier and I didn’t want to listen to that whine for 10 minutes) and let it run until the mixture is wet. I forgot the almond extract and added about halfway in. You’ll need to stop and scrape down the sides and bottom so there are no dry bits and it’s well combined.

Cleaning the food processor after I was done reminded me of the big plastic bowl my mom used to mix brownies in. Those were the best days ever. 🙂

Homemade almond butter was delicious – not too sweet, not too salty. Juuuuust right. 🙂

I bet these would make great gifts in little jars with a pretty ribbon… Noted on my Christmas spreadsheet. 🙂
